Day 1 - Vegan


I have been a veggie for 22 years and have tried a vegan diet several times during that time but have recently decided to go vegan permanently. It seems to be what my body wants and is a diet that agrees with me.

With a meat eater and a toddler in the house its going to be a challenge but they will share some meals with me which are after-all just vegetable dishes, which we could all stand to eat a few more of.

I have never minded cooking meat for my man, obviously I would rather he was veggie/ vegan too but it is his choice and as I do the cooking then he should have the meals he wants. My little one will have a varied diet from me and can make her own choices when she is ready.

So day 1 breakfast, wholemeal toast with avocado and marinated olives, and it was yummy!
